Recently, I had been seeing tantalizing photos of no-knead crusty bread efforts across the social media channels. It had been too long since I had made my favorite no-knead bread: NY Times Ruth Reichl spin on Jim Lahey’s No-Knead recipe.


Plus, I wanted to try a hack that had been mentioned: parchment paper. Using parchment paper does make it way easier to move the dough in and out of the high heat oven. And I still got that "deep golden caramel colour" from this round that usually promises a good crust.


I love this line from the recipe: “The scent of the baking bread will be almost shockingly delicious, but you’re going to have to control yourself.” Well...you can at least try…
